Recipe: Cashew Nut Curry & Courgetti
Continuing with the health journey, an amazing addition to the NutriBullet is being able to create curry pastes. This recipe is super quick and makes enough for a few servings, as well as being completely clean and lean.
- Prawns - Courgettes - 1 red onion - 2 garlic clove - Chilli Powder - Cashew nuts - Coriander - Chopped tomatoes - Vegetable stock
First thing is to make the paste, and all you need to do is chop your onion and add it to the NutriBullet along with your garlic cloves, a large handful of cashew nuts, chilli powder to taste, a handful of coriander and a dash of water. Once this has been blitzed, add it to your pan along with some chopped tomatoes and vegetable stock. Allow this to simmer and mix and then add your prawns for a few minutes!
Another great addition to my kitchen is the Hemsley + Hemsley spiralizer which spiralizes your vegetables to create a mock-pasta. I think the best vegetable to use is courgettes as they're so filling and versatile - you can adapt it to all pasta recipes! When you're using a hot sauce like the curry you can simply place it on top of the courgette and the heat will soften it, making this recipe just that extra bit quicker!
